PURPLE SWEET POTATOES CHEESE CAKE



BASE:
160 crushed Marie biscuits
80 gm melted butter
FILLING:
400 gm cream cheese
100 gm caster sugar
3 nos. eggs
30 gm coconut powder
1 tbsp cornstarch
150 gm yogurt
200 gm sweet potato
( cooked,diced)
METHOD:
1. To make base,stir all ingredients until
   combined.Press mixture into base of 18cm
   (17-inches) cake tin.
2. To make filling, beat cheese & sugar until
   smooth.Beat in eggs,one at a time, beating
   well after each addition.
3. Then beat in coconut powder,cornstarch & yogurt
   until blended.Add in sweet potato dice, mix well.
4. Pour cheese filling into prepared tin.
   Bake in preheated oven at 170 degree
   for 40 - 45 minutes.
