ONDEH - ONDEH ( SWEET POTATO BALLS WITH SWEET FILLING )


Ingredients:

600 gm sweet potatoes
1 tbsp tapioca floor
1 tbsp flour
1 tbsp sugar
1/2 grated coconut- white part only
added salt & mix well
some screw pine leaves extract juice
1-2 droops light green color
1 block palm sugar -chopped
salt to taste

Method:

1. Clean sweet potato & boil until soft. Mash & stain the fibres. Leave it to cool.

Fillings:

2.Mix palm sugar & normal sugar keep.

3.Mix mashed sweet potatoes with flour & need well to get an elastic dough,add screwpine juice & coloure

4.Shape the dough into marble size balls & flatten them.

5.Put 1 tsp of the filling in the center & reshape into balls.

6.Boil a pot of water & when it is boiling,drop in the balls.

7.The balls will float when cooked. Lift & stain.

8.Roll in the grated coconut & serve immediately.
