A:
Marinate for 1/2 hours
350 gm chicken-thinly sliced
2 tsp thin soy sauce
2tsp thick soy sauce
1 tsp oyster sauce
1tbsp Chinese cooking wine (optional)
pepper & salt to taste
1tbsp tapioca flour / corn flour
1/4 tsp bicarbonate of soda
1 tbsp sesame oil
B:
8 cm piece young ginger - sliced thinly
3 - 4 pips garlic - sliced thinly
1 1/2 tbsp cooking oil
4 - 6 dried chillies broken
C: (optional)
Beat together
1 no. egg ( optional)
pepper & salt to taste
1/2 tbsp cooking oil
GARNISH:
spring onions- cut
4cm length
Method:
1. Heat up oil & fry 'B', then add in 'A' marinated &
stir fry until cook ,if you want sprinkle some
water in it to cook, once cook turn off the heat
2.Make a well in the center, pore in the beaten egg,
mix well.
3. Add spring onions
4.Serve immediately with plain hot rice.
