STEAMED RED BEAN CAKE



300 gm red beans
Boil red beans until soft & dry

Batter:

3oo gm rice flour
75 gm starch powder
36 oz coconut milk
400 gm sugar
( mix sugar & coconut milk &
boiled until dissolved)
¼ tsp salt
½ tsp alkaline water
Red coloring

 Method:

Mix all the ingredients for batter
together & strain, mix cooked red
beans into batter.

Cook the mixture in low fire until
thick, stirring all the time to prevent
burning, pour the thick mixture into
a steaming tray & steam for 1 hour
until cooked.

Leave to cool, cut & serve.
