ROSELLE CAKE



100 gm sugar
60 gm butter
1 egg
120 gm yoghurt
½ tsp vanilla essence

Sift together:
110 gm flour
½ tsp baking soda
¼ tsp cinnamon powder

Mix together:

10 roselle chopped
1 tbsp flour

Method:

Beat butter & sugar until pale & fluffy.
Add in egg & combine well.
Add in vanilla essence & yoghurt, mix well.
Fold in sifted flour into batter.
Sprinkle in floured roselles & give it a gentle mix.
Preheat oven to 170C.
Pour batter into a lined baking pan.
Bake for 20-30 minutes or until cooked.
