FRIED CRULLERS ( YAW CHAR KWAI )



A:

½ tsp instant yeast
1 tsp sugar
2 tbsp lukewarm water

Mix together & leave it for
15 minutes until foamy.

B:

250 ml water
1 tsp baking soda
½ tsp Ammonia powder
½ tsp of Alum (pak fun)
Salt to taste

Mix all ingredients together.

C:

300-330 gm high protein flour

Oil for deep frying

METHOD:

Sift the flour into a mixing bowl.

Form a well in the center.

Add B & knead well.

Roll out into long rectangle, cover
& leave for 2 hours.

Cut into strips, place two strips
one on top of the other & press
lightly with the stick in the center.

Stretch them a little longer before
deep-frying in hot oil until golden brown.
