250 gm margarine
180 gm brown sugar
180 ml coco cola
320 gm plain flour
11/2 tsp baking powder
½ tsp bicarbonate of soda
¼ tsp ground nutmeg
200 gm dried mixed fruits
150 gm preserved fruits chopped
TOPPING:
1 tsp melted butter/margarine
METHOD:
Cream margarine & brown sugar till
light, add coco cola gradually & beat well.
Fold in flour, baking powder, soda, nutmeg &
mix well, stir in dried fruits & preserved fruits.
Pour mixture into greased baking pan & steam
over medium high heat for 1 hour, reduce to low
heat & steam for further 2 hours.
Brush melted butter on top of the cake &
cool cake in baking tray completely before
turning out.
