STEAMED LAYER CAKE PUDDING




1 cup rice flour
3/4 cup tapioca starch flour
1 cup sugar
1 cup coconut milk
1 cup water
Red food coloring
Pinch of salt
Screw pine leaves

METHOD:

Pour water, coconut milk, screw pine leaves, heat
 in a slow fire until warm.

Add sugar, salt & mix until sugar is dissolved.

Remove the screw pine leaves & remove from
heat & cool down.

 When mixture is cooled, add the both the rice &
starch four & mix well.

Make sure no clumps.

Separate the batter into 5 parts in separate bowls.

Mix one part with dark red color, 2 parts in lighter
red & the last 2 parts leave it white.


In a tray, pour the first layer & put in steamer &
steam for 3-5 minutes.

Check if batter is cooked.

 If cooked, pour in the next layer, steam for another
3-5 minutes.

 When cooked repeat until all the layers are done.

The dark red being the last layer.

When cooked, remove the tray from steamer & cool.

Once cool cut  & serve with tea or coffee.

 The layers can be seen clearly & can be peeled layer by layer.
