MINCED FLAKY PAROTTA WITH VEGETABLES
Parotta 2 cut into small pieces
Chopped Onion 1
Chopped Tomato 1
Chopped mixed vegetables
(French beans, cabbage, carrot, spinach)
Chopped bird’s eye chilly
Chopped Green Chilly 1
Chopped red chilly 1
Ginger garlic paste - 1 tsp
Curry powder 1/2 tsp
Pepper powder - 1/4 tsp
Turmeric - 1/4 tsp
Pinch of garam masala
Egg - 2
Curry leaves few
Chopped cilantro to garnish
Method:
Heat up oil, add onion & sauté until onion become soft.
Add ginger & garlic paste, stir for few minutes.
Add curry leaves, all the chilies, curry powder, turmeric
powder, stir until raw smell of curry powder goes off.
Add tomato, mixed vegetables, sprinkle little water &
fry for few minutes.
Now add the eggs & cook it well, make it like scrambled egg.
Finally add the parota pieces, garam masala, pepper
powder & salt .
Garnish with cilantro & serve with spicy curry or chilly sauce.
Note:
Can add in cooked chicken pieces & prawns.
