GLUTINOUS RICE & PLAIN FLOUR PUDDING WITH SCREW PINE LEAVES JUICE ( SERI MUKA )


 
For bottom layer:

300 gm glutinous rice
180 ml coconut milk
(From ½ coconut)
1 tsp salt
1 screw pine leaves

Top layer:

4 eggs
150 gm sugar
350 ml coconut milk
(From 1 coconut)
3 tbsp plain flour
2 tbsp screw pine leaf juice
(From 3 leaves)
Few drops of green color

1 piece banana leaf, for pressing

Method:

BOTTOM LAYER :

Put all ingredients into a steaming
tray, steam high for 40-45 minutes
Discard screw pine leaves, fluff up
the rice & press with banana leaf
until very firm.

 TOP LAYER :

Stir eggs & sugar lightly until
sugar dissolved, add coconut milk,
screw pine leaf juice, color & mix well
stain over the bottom layer, steam with
low heat until set.

Remove & leave it to cool before cutting.

Serve with tea or your favorite drink.
