480 gm basmati rice
( pre-soaked for 10 mints & stained )
2 sausages ( diced & lightly fried )
250 ml evaporated milk
500 ml water
1 tbsp ginger & garlic paste
1 tbsp mixed spice ( cinnamon,
cloves, cardamoms & star anise )
2 bay leaf
2 onion sliced ( big)
1 tbsp pepper crushed
1 small tomato chopped
1 tsp curd
1 tsp curd
2 tbsp ghee
Salt to taste
Few drops of yellow &
red coloring(optional )

To garnish:
Chopped coriander leaves.
Fried cashew nuts, almond flaked, fried onion etc…
Method:
Heat ghee in a deep pan. Fry mixed spice, onion till
light brown, add ginger & garlic paste & fry till fragrant
add bay leaf, tomato, pepper & rice fry for few mints,
add milk, water, curd, sausages & salt cook till done.
Rice can be colored when almost done, just sprinkle
a few drops of coloring over rice
When rice is cooked fluff up & garnish with coriander
leaves, fried onions, cashew nuts etc..etc..
Serve with salads & papadam.
