A:
1 ½ cup Plain Flour
¾ cup Caster Sugar
¾ cup Caster Sugar
¼
teaspoon Salt
2 teaspoons Baking Powder
2 teaspoons Baking Powder
B:
1/3 cup Vegetable Oil
1 Egg lightly beaten
1/3 cup fresh milk
1/3 cup fresh milk
½ tsp Strawberry essence
1 tbsp Strawberry paste
C:
1 cup fresh Strawberries chopped
Topping:
Strawberries sliced
Icing sugar
Method:
Preheat
oven to 200◦ C.
Line
muffin cups on the muffin tray.
Can make
medium size 1 dozens
( 12 muffins )
Combine flour, caster sugar,
salt & baking powder.
In a
cup mix oil, egg, milk,
essence, strawberry paste.
Add
this to the flour mixture &
mix well.
Make
sure there are no lumps
in your batter.
Fold in Strawberries gently.
Fill in the muffin cups, top with
sliced strawberries.
Bake
for 20 to 25 minutes.
Leave
the muffin’s on the wire
rack to cool down.
Sprinkle
the muffins with icing
sugar & serve.
