TAPIOCA WITH ACHOVIES



1 tsp mustard seeds
1 dries chilly broken
3 shallots sliced
2 pips garlic chopped
1 red chilly sliced
2 green chilly sliced
1 inch ginger sliced
1 tbsp anchovies
1 stalk curry leaf
1 small tapioca cut
½ tsp turmeric powder
Salt to taste
Oil for cooking

METHOD:

Heat up oil fry mustard seeds, dried chilly.

Add shallot, garlic, ginger, anchovies fry
until light brown, add both chill’s, curry leaf.

Add tapioca, salt, turmeric powder mix well
add some water & cook until done.

NOTE:

This dish is good during rainy days with
a cup of hot black coffee.


BEAN CURD, VEGETABLES IN SPICY COCONUT GRAVY



2 pieces fried bean curd cut
2 French beans cut
1 tomato cut
2 baby corn cut
1 cabbage leaf cut
3 florets of broccoli
1 small carrot cut

THINGS TO POUND:

5-10 bird’s eye chilly
3 shallots
3 pips garlic
1tsp dried prawns (optional)

1 cup coconut milk
1 tsp turmeric powder
Salt to taste
Oil for cooking
Curry leaf

METHOD:

Heat up oil fry pounded things until
raw smell goes off.

Add vegetables, bean curd,turmeric powder,
salt,enough water mix well, cover & cook
until vegetables are cooked.

Add coconut milk & stir until it comes to boil.
Add curry leaf.

Serve with rice, bread etc…etc…

STIR-FRIED SPICY BABY CORN WITH PEANUTS



THINGS TO POUND:

2  shallots
2 pips garlic
2 red chilly

100 gm baby corn sliced
50 gm French beans sliced
Pinch of turmeric powder
Salt to taste
Oil for cooking

1 tbsp roasted peanuts chopped

METHOD:

Heat up oil & fry pounded things until
nice smell comes.

Add in both vegetables, turmeric powder,
salt, mix well, sprinkle some water, cover &
cook ( stir on & off).

Once cooked add peanuts & mix well.

Serve hot with rice, bread  etc..etc..


STIR-FRY LADY'S FINGERS



200 gm lady’s finger sliced
2 shallots sliced
2 pips garlic sliced
1 red chilly sliced
Pinch of turmeric powder
Salt to taste
Oil for cooking
Curry leaves

METHOD:

Heat up oil fry garlic, shallot, chilly &
curry leaves until soft, add in lady’s
finger, turmeric powder, salt mix well
sprinkle some water, stir in between,
cook until done.

Serve hot with rice.

SPICY MUTTON DRY CURRY



500 gm mutton
2 potatoes cut
2 tomatoes cut
1 onion big chopped
2 tbsp ginger & garlic paste
2 ½ tbsp chilly powder
½ tbsp meat curry powder
½ tbsp kurma powder
1 tsp turmeric powder
½ tsp garam masala powder
1 tbsp mixed spice (cinnamon,
star anis, cardamom, cloves)  
Curry leaves
2 green chilly sliced
Coriander leaves
Salt to taste
Oil for cooking

METHOD:

Heat up oil fry mixed spice, onion until light
brown, add in curry leaf, ginger & garlic paste,
stir for 2 minutes.

Add in chilly powder, curry powder, kurma
 powder, turmeric powder & mix well until
raw smell goose off, add little water & stir
for 2 minutes.

Add tomatoes, potatoes, mutton, salt, enough
water cover & cook well.

Once mutton is cooked add garam masala &
green chilly mix well.

Garnish with coriander leaves.

Serve with rice, breads etc…etc..
