PEPPER CHICKEN


This recipe is from my sis Mages Mohan

500 gm chicken (cut into pieces)
1 tbsp mixed spices
(Cinnamon, star anise, cardamoms & cloves)
1 onion big chopped
1 tbsp ginger & garlic paste 
2 – 3 green chilly cut

Curry leaves

1 tomato cut

2 - 3  tbsp pepper crushed

1tbsp red chilly flakes

½ tsp turmeric powder

½ tsp kurmah powder

Salt to taste

¼ tsp garam masala

Coriander leaves chopped

Oil for cooking

METHOD:

Marinate chicken with ginger & garlic paste,
Pepper, chilly flakes, turmeric & kurmah powder
for some time.

Heat up oil add mixed spice’s, onion fry until half cooked
add curry leaves, green chilies fry for few minutes, add tomato
cook for 2 minutes, add chicken, salt mix well, add little water if
u need cover & cook until done, add garam masala & coriander leaves.

Serve with rice or any type of breads.

Ripe Mango(Mambazham) - 1 no
Turmeric powder - A pinch
Chilly powder - 1 tsp
Green chillies - 1 no
Salt - As reqd
Coconut(grated) - 1 cup
Cumin seeds(Jeerakam) - 1 tsp
Coconut Oil - 2 tbsp
Mustard seeds - 1/2 tsp
Red Chillies(Kollamulaku) - 3-4 nos
Curry Leaves - 1 stem
Yoghurt/Curd - 1 cup
Fenugreek(Uluva) powder - 1/2 tsp

 Method

1)Cut the mango into pieces and boil in water along with turmeric, green chillies, chilly powder and salt.

2)Grind the coconut with the cumin seeds to a fine paste and add this to the boiling mango.


3)Bring this to a boil and take off the flame.


4)Blend the yoghurt to make it smooth and add this to the mixture.


: See to it that the yoghurt does not split.


5)Heat oil in a pan.


6)Add mustard seeds and when they crackle, add red chillies and curry leaves.


7)Add the above seasoning to the above mango curry and mix well.


8)Sprinkle fenugreek powder and mix well again.


:- Serve with rice.


Fried Banana Fritters




Ingredients:
3 big well ripe bananas
1- 1 1/2 cup self raising flour
1  tablespoon sugar
2 - 3 tbsp grated coconut
1/2 tsp cardamon powder
Pinch of salt
Some water


Oil for deep frying

Method:

Mash the bananas, add all the ingredients,
mix well & make into thick batter  
Heat up oil, scoop up a spoonful of batter 
into the oil & deep fry until golden brown.



Nyonya Fried Chicken Recipe (Inchi Kabin)



 Ingredients:
1kg chicken (cut into pieces)
Oil for deep frying

Seasoning:
2½ tbsp curry powder
1 tsp salt
10 tbsp coconut milk

Dipping sauce:
1 red chilli, seeded and cut into strips
Juice of half a calamansi lime (use lime or 
lemon if you can’t find calamansi lime)
1 tsp sugar
1 tsp dry mustard
3 tbsp Worcester sauce

Method: 
Marinate the chicken with the Seasonings for 
at least 4 hours, or best overnight. In a frying pan,
deep fry the seasoned chicken until ¾ cooked and
let cool.Heat the oil again till very hot and deep fry
for approximately 1 minute or when sizzling subsides.
Remove the chicken. Allow the oil the heat up again
and repeat process, twice till very crisp and golden brown.
Mix the dipping sauce in a small bowl and serve the fried
chicken with it.

Prawn Fritters - 2



Ingredients
500 gm prawns
350 gm plain flour
3 tbsp corn flour
2 egg whites ( beaten until stiff )
1 cup water
Salt to taste
Oil for deep frying

Method
  1. Clean the prawns, leaving shell intact. Wash and drain well.
  2. Sift flour into a bowl and mix with corn flour.
  3. Make a hole in the center and gradually pour in water to make a thicker batter.
  4. Add salt and fold in egg whites gently.
  5. Heat oil. Dip prawns into batter and fry the prawns until golden.
  6. Serve with lettuce, tomatoes and chilly sauce.

DRY FRY SPICY MINCED MEAT



300 gm minced meat
(Can food lunch & meat will do)
2 onions big chopped
1 tbsp ginger & garlic paste
1 tomato medium chopped
2 green chilly cut
Curry leaves
½ tsp turmeric powder
2 - 3 tbsp chilly powder
½ tbsp meat curry powder
2 -3 tbsp water
Salt
Oil
½ tsp mixed spice powder
 (Garam masala)
Coriander leaves chopped

Method:

Heat up oil fry onions until light brown,
add ginger & garlic paste fry until nice smell
comes out, add green chilly, curry leaves, tomato
stir for few minutes until soft.
Add chilly powder, curry powder & turmeric powder,
Stir for a while add water & cook until raw smell goes,
Add in meat, salt & mix well till cooked, add garam masala
coriander leaves. Serve hot with plain rice or breads.

NOTE:
If using can food check salt before you add in.
