BAKED PANDAN CAKE



1 cup plain flour
1 cup sugar
1 cup screw pine leaves + water (juice)
1 cup coconut milk concentrate
1 cup evaporated milk
3 eggs
2 tbsp butter melted
½ tsp salt
Green colour optional

TOPPING:

Sesame seeds

METHOD:

Mix all above ingredients until
well companied.

Strain the batter using a sieve to remove
any lumps.

Grease baking pan with oil /butter.

Pour the mixture into the pan.

Bake the cake in pre-heated oven
in 180°C for 50 minutes.

Take it out & sprinkle sesame seeds on
top & bake for 15 more minutes or  until the
center feels firm & is not wobbly when gently
 pressed & the edges are a light golden brown & crusty.

Allow to cool completely before cutting into wedges &
serve.
