CRAB WITH SALTED EGGS



 

A:
1 kg crab cleaned & cut
1 cup corn flour
Oil for deep frying

Dust the crab with flour &
deep fry in oil keep aside.

B:
2 salted eggs hard boiled,
remove the shell & chopped
( Can buy Salted eggs from
Supermarkets or Chinese
grocery shops )

C:
10 bird’s eye chilies, 
red & green chopped
1 tbsp garlic chopped
2 stalk curry leaves
½ tsp pepper
2 tsp sugar
3 tbsp Evaporated milk
3 tbsp butter

METHOD:

Melt the butter fry garlic, curry 
leaves,chilies until golden brown.

Add eggs, pepper, sugar & milk 
stir till dry.

Add fried crabs & stir-fry.

Remove from fire & serve hot.

SARDINE FRIED RICE






2 cups rice cooked
1 can sardine ( small )   in
tomato sauce ( remove the bones )
1 onion chopped
2 cloves garlic chopped
Few birds eye chilly chopped
1 red chilly sliced
1 tsp chili paste
1 tbsp dark soya sauce
Salt to taste
Oil for cooking
1 stalk spring onion chopped
Coriander leaves chopped

METHOD:

Heat up oil fry onion, garlic until
brown add chilies, chilly paste
fry for few minutes.


Add in sardine, rice, salt mix &
stir-fry.

Last add spring onions, coriander
leaves mix well & serve hot.

VERMICELLI ( SEMIYA ) CHICKEN BIRYANI




For Garnishing:
Coriander leaves chopped
Mint leaves chopped

A:
200 gm vermicelli
1 tbsp cashew nuts broken
1 tbsp ghee

Heat up ghee fry cashew nuts
until golden brown, keep aside.

In reminder ghee fry vermicelli
until golden brown keep aside.


For Gravy:
150 gm chicken boneless pieces
1 potato medium cut
1 tomato medium cut
2 tbsp green piece
1 onion big cut
1 tbsp ginger & garlic paste
2 green chilies cut
1 stalk curry leaves
2 tbsp curd
½ tsp chili powder
½ tsp meat curry powder
½ tsp garam masala powder
¼ tsp kurmah curry powder
¼ tsp turmeric powder
Salt to taste
1 tbsp mixed spice
( cinnamon, cardamoms,
cloves, star anis )
1 bay leaf torn
Oil for cooking

METHOD:

Heat up oil, fry the mixed spice, bay leaf.

Add onion fry until light brown colour.

Add ginger garlic paste stir for few seconds.
Add green chilies, curry leaves,
tomato stir for few minutes.

Add chilly powder, curry powder,
kurmah powder, turmeric powder
stir for few seconds, add 3 tbsp
water stir well.

Add chicken, potato, green peas,
salt mix well cover & cook till dry.

Add in curd, garam masala & mix well.

Last add in vermicelli, cashew nuts,
coriander leaves & mint leaves in the
cooked chicken, mix, cover & remove
from fire.

Let it stand for few minutes before serving.

Serve with Curd Salads & Padams.

DELI CHICKEN & CHEESE STUFFED BREAD LOAF





1 loaf bread
1 packet Deli chicken
Sliced tomatoes 
Mozzarella cheese grated
Cheddar cheese grated
Parmesan cheese grated
Pepper to taste

METHOD:

Take a piece of bread loaf, cut a
hole in the top & dig out the inside
of the bread ( save the crumbs for
homemade breadcrumbs )

Stuff the bread with layers of cheese,
pepper, tomato & slice of deli 
chicken, pressing down on each 
layer as you build, add as much 
as you like.
 
When you reach close to the top, place
the piece of bread you cut off back onto
the bread.

Cover entire sandwich with cheese &
cook on a pan (covered with foil) in a
 preheated 180 degree oven for about
15-18 minutes or until cheese is
melted & turn into golden brown colour.

Note:

Fillings can be change as your
Wish with minced meat, sausages,
sea foods or vegetables.
