GREEN TOMATO PICKLE



1 tsp mustard seeds
1 dried chilly broken
1 onion chopped
3 cloves garlic sliced/ chopped
1 green chilly sliced
1 red chilly sliced
Curry leaves
4 green tomatoes chopped
1-2 tbsp chilli flakes
¼ tsp turmeric powder
Salt to taste
Palm sugar to taste
Vinegar to taste
¼ tsp asafetida powder
¼ tsp fenugreek powder
Gingerly oil ( Indian sesame oil )

METHOD:

Fry mustard seeds & dried chilli in oil.

Once mustard seeds start to pop up add onion,
garlic, both chillies & curry leaves, fry till golden.

Add tomatoes, turmeric powder & salt,
cook until soft.

Add chilly flakes, vinegar, palm sugar, fenugreek
powder & asafetida powder & mix well.

Remove from fire & leave it to cool.

Once cool transfer to dried container.




BANANA PANCAKE



1 cup self-rising flour or
( 1 cup plain flour + ¼ tsp baking powder )
1 egg
1 tbsp palm sugar / sugar ( more or less )
1 cup milk ( more or less )
½ cup well ripe bananas mashed
Butter to grease

METHOD:

Mix all the ingredients together & make
thick batter, keep aside for 10 minutes.

Heat up frying pan, grease some butter,
pour one ladle of batter in it.

Cook both sides until golden brown.

Serve with honey, ice-cream & chocolate sauce on top.

NOTE:

Add any fruits of your choice to get different taste.

SPICY SQUIDS WITH TURMERIC



500 gm squids clean & cut
1 lemon grass cut
1 onion chopped
3 cloves garlic chopped
1 piece ginger sliced
1 green chilly sliced
1 red chilly sliced
Few birds eye chillies chopped
1 tomato chopped
Curry leaves
½ tsp turmeric powder
½ tsp pepper powder
Salt to taste
Oil for cooking
Lime juice to taste

METHOD:

Heat up oil, fry lemon grass, onion, garlic, ginger,
all the chillies until golden & fragrant.

Add tomato, turmeric powder & salt cook until soft.

Then add squids, curry leaves & pepper stir- fry till cooked.

Last add lemon juice mix well & serve.



MINCED MEAT & OMELET SANDWICH ( ROTI JOHN )



4-6  baguette / bread
250 gm chicken minced /
mutton or beef
1 large onion chopped
1 tsp garlic chopped
1 green chilly chopped
1 red chilly chopped      
salt to taste
pepper taste
Chilli sauce / tomato ketchup
3 eggs lightly beaten
Butter for cooking

METHOD:

Fry the onion, garlic, chillies in little butter.

Add minced meat & stir-fry until cooked.

Sprinkle salt & pepper to taste.

Baguette halved lengthwise, spread with sauce.

Then dip the sauce part into the egg mixture & pan fry
the whole baguettes crisp on one side or both sides.

Slice into several portions & serve hot.

MEATBALL DRY CURRY



MEATBALL:

350 gm minced meat ( mutton, lamb,

  beef, pork or any of your choice )
2 potatoes ( boiled, peeled & mashed )
2 onion big chopped
3 cloves garlic chopped
1 piece ginger chopped
1 stalk curry leaves chopped
1 stalk coriander leaves chopped
1 green chilies chopped
1 red chilly chopped
1 tsp garam masala powder
salt to taste


Mix all ingredients together.

Shape into small balls.

Heat up oil in a heavy saucepan.

Brown the meatballs & set aside.


GRAVY:

Oil for cooking
1 bay leaf
1 large onion chopped
1 tbsp ginger & garlic paste
1 tbsp chilly powder
1 tsp meat curry powder
½ tsp kurmah powder
¼ tsp turmeric powder
¼ tsp garam masala
1 tbsp tomato puree
1 tomato chopped
1 green chilly sliced
Lemon juice to taste
Coriander leaves chopped
Mint leaves chopped
Curry leaves chopped
Salt to taste


METHOD:

Using the same oil, fry onion until soft &
golden brown.

Add in bay leaf, ginger & garlic paste stir for few minutes.

Add chilly powder, meat curry powder, kurmah powder
turmeric powder & stir for few more minutes.

Add tomato, green chilly & stir until it becomes soft.

Add tomato puree, garam masala, salt.

Once the gravy start to boil add meatballs,
chopped herbs & mix well until all the
meatballs are coated with the gravy.

Remove from fire add lemon juice mix well.

Serve with rice or any types of bread.

DEEP FRIED SPICY MEATBALLS



350 gm minced meat ( mutton, lamb,
  beef, pork or any of your choice )
2 potatoes ( boiled, peeled & mashed )

1 stalk curry leaves chopped
1 stalk coriander leaves chopped
2 green chilies chopped
1 red chilly chopped
1 tsp garam masala powder
1 tsp meat curry powder
1 tsp pepper powder
salt to taste

Mix all ingredients together.
Shape into small balls.

Egg lightly beaten
Bread crumbs
Oil for deep frying

Method:

Dip each meatball in egg, roll into
bread crumbs  & deep fry in hot
oil until golden brown & cooked.

Serve with sauce of your choice.

SPICY TURMERIC CHICKEN



Things to marinate:

500 gm chicken pieces
3 tsp ginger & garlic paste
3 tsp pepper powder
2 tsp chilly flacks
1 tsp turmeric powder
Salt to taste

Marinate the chicken for 10-20 minutes.


1 cinnamon stick
2 star anises
1 bay leaf
1 stalk lemon grass crush
2 large onion sliced
1 inch ginger sliced
3 cloves garlic sliced
2 green chillies sliced
1 red chilly sliced
1 tomato sliced
3 birds eye chillies sliced
1 stalk curry leaves
Oil for cooking
Coriander leaves for garnishing


METHOD:


Heat up oil, fry cinnamon, star anises, lemon
grass, add onion,ginger, garlic, bay leaf, curry 
leaves & fry till onion turn into light brown colour.

Add all the chillies, tomato & marinated chicken.

Mix well cover & cook in medium flame ( stir on &
off ) until cooked.

( If need add some coconut milk / water to get gravy ).

Add coriander leaves, mix well & serve.
