DEEP-FRIED SPICY HONEY WINGS




2 tbsp rice flour +
1 tbsp corn flour

Oil for deep frying

Things to marinate:

4 chicken wings
1 tsp lemon juice
1 tsp chilly powder
½ tsp pepper powder
1 tsp honey
1 tsp ginger & garlic juice
½ tsp salt

METHOD:

Marinate chicken wings with all the
above ingredients for 30 minutes.

Heat up oil, dust the chicken wings with
both flour & deep fry until golden brown. 

Serve with thousand island sauce  or
sauce of yr choice.

NEYYAPPAM / UNNIYAPPAM




250 gm rice flour
125 gm brown sugar (Molasses )
(dissolved in water)
5 well ripe bananas
(mashed)
3 tbsp coconut pieces
(chopped into pieces/fried in ghee)
½ tsp cardamom powder
¼ tsp dried ginger powder
2 pinch of cumin powder
Ghee /oil to fry
¼ tsp yeast (optional) 

METHOD:

Mix all above ingredients well & make
thick batter (must be thicker than pan cake
batter) keep aside for at least 30 minutes.

Heat up appam mould with ghee &
add 1 tbsp of batter to each hole in
the mould deep fry till brown, turning
both sides.



Note:

If don’t have appan mould, heat up
Ghee/oil in a frying pan, add 1 tbsp
Of batter & deep fry turning both sides
(shape will be different form above one)

CUSTARD & CORN PUDDING


1 cup custard powder
1 cup sugar
1 cup ideal milk
4 cups water
1 can cream corn / corn
2 tbsp margarine/butter

METHOD:

Mix all ingredients together & cook
until thick/done.

Transfer into a tray & leave it cool.

Once cool cut & serve.

SWEET AVAL ( BEATEN RICE) WITH COCONUT


1 cup aval ( poha/beaten rice)
1 cup grated coconut
¼ cup brown sugar
1/2 tsp cardamom powder
2 pinch of cumin powder
1 tbsp ghee melted  

Method:

Mix all ingredients together & keep
for at least1 hour before serve.

BREAD PUDDING WITH YOUNG COCONUT



3-4 young coconut flesh cut into pieces
85 ml coconut milk / fresh milk
1 loaf  bread (cut the edges)
60 gm sugar
1 egg
1 tbsp roasted & chopped almonds
25 gm raisins
¼ tsp vanilla essence
25 gm plain flour

Method:

Soak torn bread pieces in coconut milk.

Beat egg & sugar until sugar dissolved.

Add in flour & all the other ingredients
together & mix well.

Pour the mixture into greased tray &
bake until the color turns light brown
or until cooked.


BANANA'S IN SUGAR SYRUP



8 ripe bananas
1 egg lightly beaten
Oil to fry

Heat up oil, dip bananas in egg & fry
both side until golden brown.

For syrup:

1/4- ½ cup sugar
½ cup water
1 small piece of cinnamon
1 star anise
1 cloves
1 cardamom
¼ tsp nutmeg powder

Add all above ingredients & make
sugar syrup.

Method:

Add fried bananas to sugar
syrup, let it soak for20-30
minutes & serve.

YOUNG JACK FRUIT WITH COCONUT




A:
1 tsp mustard seeds
½ tsp cumin seeds
1 tsp black horse grams
1 dried chilly broken

B:
2 shallots chopped
2 pips garlic chopped
1 red chilly chopped
1 stalk curry leaf

300 gm young jack fruit
(Remove the skin/cleaned/cut &
cook with little turmeric powder/broken
into pieces)
2-3 tbsp grated coconut
Salt to taste
Oil for cooking 

Method:

Heat up oil fry A, then B until light brown.

Add in cooked jack fruit, salt & mix well.

Add grated coconut & stir-fry.

Serve as a side dish with rice.

Baked Bean Cake or Muffins

Ingredients:
1 cup raisins
1 (19 ounce) can baked beans in tomato sauce
3 eggs
1 cup canola oil (I used 1/2 cup oil, 1/2 cup 
   unsweetened applesauce)
1 1/2 cups granulated sugar
3 cups flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
1 cup pecans, chopped

Coconut Icing
1/2 cup whipping cream
1/3 cup butter
1 cup shredded coconut
1/2 cup pecans, chopped
 
Directions:

Cake:

Place raisins in a bowl and pour boiling water over them, set aside.
In large mixing bowl, mash beans with a fork.

Add eggs, oil and sugar, beat well.

Combine flour, baking soda, baking powder, cinnamon and salt.
(I sometimes add a 1/2 tsp nutmeg, 1/4 tsp cloves to spice it up a little!).

Stir into bean mixture.

Drain raisins and reserve liquid.

Add raisins, nuts and vanilla to batter.

If batter is too thick, add a little of the raisin water, stirring to combine.
Pour mixture into a greased 13" x 9" baking pan.

Bake at 325 degrees for approximately an hour or until tester inserted in centre comes out clean.

Remove from oven and let cool in pan on rack.

Icing:

Combine sugar and cream in a heavy-bottomed saucepan over medium heat.

Bring to a boil, cook for 2 minutes.

Add butter, remove from heat and stir in nuts, coconut and vanilla.

Pour evenly over the cake, allow to cool before cutting.

Note: 

Edited to reduce 1 cup oil to 1/2 cup and 1/2 cup applesauce and reduced the sugar from 2 to 1 1/2 cups with good results. 

This recipe will makes 24 large muffins, baking time is 30 minutes.
